Chickpea & Potato Pizza Base

This gluten free, plant based pizza base recipe is the perfect option for those of you looking to increase your vegetable intake. Everyone loves pizza and this base has chickpeas, potatoes, carrots, spinach, garlic and tumeric. It is high in fibre, protein, vitamins and minerals. It’s very tasty and is the perfect base for any toppings. I always use a batch of my homemade pizza sauce, some roasted courgettes, mushrooms, peppers and garlic, fresh cherry tomatoes and a sprinkling of feta cheese or mozzarella. It really is delicious and very easy to make.

How to make it:

1 cup mashed root veg (potato, carrot etc)

1 cup chickpea flour

2 frozen spinach blocks (defrosted)

1 clove garlic crushed

1 teaspoon turmeric

1 tablespoon water

How to make it:

Heat the oven to 220 degrees C.

Put the mashed veg and flour into a bowl and mix well with a fork. Add the spinach, garlic and turmeric and mix again.

Add the water and stir well until a smooth paste forms. Add more water if needed but not too much. You want it to be more dough like than anything else.

Line a baking tray and sprinkle over some chickpea flour. Scoop the dough out onto the baking tray and with a spatula, smooth out the dough until it’s about 1//2 cm thick.

Put into the oven to bake for about 15 mins. Take out and flip over and put back in the oven for another 5 mins.

Pour over 1 portion of my Homemade Tomato Sauce and smooth out all over. Add any toppings of your choice and put back in the oven until the pizza is cooked to your liking.
